Lychee Sandesh

1. 1liter whole milk.
2. 1 tbsp. white vinegar or lemon juice.
3. 3-4 tbsp. sugar (to taste)
4. 10 strands of saffron
5. 2 almonds chopped very finely
6. 4-5 pistachios chopped very finely
7. 15-20 canned, seeded lychee or fresh seeded lychee
8. a small sheet of silver foil

Method:
1. Bring the milk to boil. Add vinegar/lemon juice and let the milk curdle. Simmer for a minute till the milk is completely curdled. (you should get a light green color whey)
2. Strain and put under running water for half a minute.
3. Squeeze out the excess water and shift to a plate. Add all the remaining ingredients and mash with hands till you get a smooth paste.
4. Take a lychee and stuff this paneer filling inside.
5. Decorate with silver foil and chill till served.
