Mango Sandesh

1. 1lt whole milk
1. 1 tbsp. white vinegar or lemon juice
3. 3-4 tbsp. sugar (to taste)
4. 10 strands of saffron
5. 2 almonds chopped very finely
6. 4-5 pistachios chopped very finely
7. 2-3 ripe mangoes
8. 1 cup sugar syrup
9. a small sheet of silver foil

1. Bring the milk to boil. Add vinegar/lemon juice and let the milk curdle. Simmer for a minute till the milk is completely curdled (you should get a light green color whey).
2. Strain and put under running water for half a minute.
3. Squeeze out the excess water and shift to a plate. Add all the remaining ingredients and mash with hands till you get a smooth paste.
9. Peel the mangoes and make thin long slices. Dip the slices in the sugar syrup (so that the slices don’t turn black).
4. Take a slice and place little paneer filling at one end and roll the slices up tightly. Make such rolls with the remaining slices.
5. If necessary secure the roll with a toothpick.
6. Decorate with silver foil and chill till served.
