Couscous Salad
Ingredients:
Feta cheese may be substituted with paneer.
Marinate ¾ cup paneer crumbles in 1tsp. lemon juice, 1 tsp. olive oil and salt for about an hour and put into the salad.

1. 150 gms couscous
2. 3-4 cups of boiling water.
3. ¾ cup chick peas
4. 1 red bell pepper, roasted,peeled and chopped
5. 1/3 cup pitted black olives
6. 1/3 cup chopped onion
7. 3 tbsp. fresh chopped mint
8. 3 tbsp. olive oil
9. 2 tbsp. lemon juice
10. ¾ cup crumbled feta cheese
11. salt to taste
12. freshly ground pepper.
13. 5-6 lettuce leaves cleaned
For Garnishing:
5-6 mint fresh leaves

Method:
1. Take the boiling water, add couscous to it and cover and let stand for 2 minutes.
2. Then drain the excess water in the strainer and keep aside.
3. Shift to a dish and add chickpeas, bell pepper, olives, onions, and mint.
4. Toss with olive oil and lemon juice and gently stir in the crumbled cheese.
5. Season with salt and pepper to taste.
6. Lay the lettuce leaves in a serving dish and pile the salad over the bed of lettuce leaves. Make a flower with the mint leaves in the center.
7. Refrigerate till ready to serve.
