Spinach soup

1. 3 tsp. olive oil
2. 1 small onion, chopped finely
3. 1 clove garlic, chopped finely
4. 1 small potato, boiled and chopped finely
5. 1 tomato, chopped finely
6. 250 g spinach leaves, chopped and blanched
7. 1-2 cups water
8. ¼ cup milk
9. ¼ cup cream
10. freshly ground pepper
11. salt to taste

1. Heat oil.  Sauté onions and garlic for 2 minutes over medium heat until soft.
2. Add potatoes and stir for half a minute.
3. Add tomatoes and stir again.
4. Then add spinach and enough water and bring to a boil.
5. When it comes to boil then add milk and cream and stir properly.
6. Season with salt and pepper and boil again for about 3-4 minutes till thick.
7. Serve hot with warm bread.

 

Take the spinach and pick over and remove any damaged or discolored leaves, trimming off any thick, coarse or long stalks.  Chop them coarsely.  Clean the spinach in water to remove any dirt or grit clinging to them.  Put the cleaned spinach in a large saucepan and put only the water that is clinging to it.  Add about ¼ tsp. of salt and stir.  Cook covered for about 4-5 minutes till the spinach has collapsed and is tender.  Drain the spinach in a colander or conical sieve, pressing the leaves against the sides to squeeze out the liquid.  Now the spinach is ready to use.
