Couscous soup

Ingredients:


Ingredients:

1. 3 tsp. olive oil
2. 1 onion, chopped
3. 1 clove garlic, chopped
4. 1 tsp. coriander powder
5. ½ tsp. cumin powder
6. ¼ tsp. chili powder
7. salt to taste
8. 5 cups vegetable stock
9. ½ cup chickpeas, boiled
10. ¼ cup couscous
11. 1 tbsp. parsley, chopped
12. 1 tbsp. mint, chopped



Method:

Method:

1. Heat oil and sauté onions and garlic over medium heat for 2 minutes until soft.
2. Add coriander powder, cumin powder, chili powder and salt. Stir and pour in the vegetable stock.  Bring it to boil and cook for 3-4 minutes over medium flame.
3. Add chickpeas and couscous and remove from heat.
4. Serve hot garnished with mint and parsley.
