Carrot Ginger Soup

Ingredients:


Ingredients:

1. 1 tbsp. butter
2. 1 onion, chopped
3. 700g carrots, peeled and diced
4. 1 tsp. fresh grated ginger
5. 2 tsp. coriander seeds, crushed
6. 1l vegetable stock or water
7. salt and pepper to taste

For Garnishing:
4 tbsp. cream



Method:

Methods:

1. Heat butter and fry the onions for about 5 minutes till transparent.
2. Add carrots, ginger and crushed coriander seeds and stir on medium flame for 5 minutes.
3. Add the stock or water and bring to a boil.  Cover and cook until the carrots are tender.
4. When the carrots are tender, puree the soup in a blender and then sieve.
5. Reheat the soup again and season it to suit your taste.
6. Ladle the soup in the bowls and serve hot topped with a tbsp. of cream.
