Cauliflower Soup

1. 1 tbsp. butter
2. 1 bay leaf
3. 1 onion, chopped
4. 100g potatoes, peeled and diced
5. 500g cauliflower, separated into little florets
6. 1 garlic clove, crushed
7. 800ml vegetable stock or water
8. salt and pepper to taste
For Garnishing:
some finely chopped fresh coriander
Method:
Method:1. Heat butter. Add bay leaf and fry the onions for about 5 minutes till transparent.
2. Add potatoes, cauliflower and garlic and stir on medium flame for 5 minutes.
3. Add the stock or water and bring to a boil. Cover and cook until the cauliflowers are tender.
4. When the cauliflowers are tender, puree the soup in a blender and then sieve.
5. Reheat the soup again and season it to suit your taste.
6. Ladle the soup in the bowls and serve hot topped with some fresh coriander.
