Mushroom Coconut Soup
Ingredients:
The main ingredient of this coconut soup is coconut cream which gives it a delicious taste. Here by coconut cream I mean the inside part of the green coconut. Take a green coconut, take out its water and scoop out the creamy inside part of the coconut.
Ingredients:
1. 1 cup vegetable stock
2. 2 cups water
3. ½ cup chopped shitake mushrooms
4. ½ cup chopped button mushrooms
5. 8 scoops of coconut cream
6. 2 tbsp lime juice
7. salt to taste
8. 4 lime leaves

1. Bring the vegetable stock and water to boil.
2. Put mushrooms, coconut cream, lime juice and salt.
3. Lastly add lime leaves and serve hot.
