Crepe A La Florentine

Ingredients:



This French delicacy will certainly win your heart.

For the Filling:

Ingredients:
1. 1 tsp. olive oil
2. 20-25 spinach leaves, cleaned, stemmed, chopped, blanched and squeezed
3. 1 clove garlic, chopped
4. 4 tbsp. heavy cream
5. salt to taste
6. pepper to taste
7. 2 tbsp. grated parmesan cheese


For the Crepe Batter:

Ingredients:
1. 1 cup self raising flour
2. ¼ tsp. salt
3. 1 /14 cup milk

Making the Crepes:

Ingredients:
1. 12-15 tbsp spinach mixture.
2. 2 tomatoes cut into circles.
3. some grated parmesan cheese
4. some grated emmantal cheese



Method:


For the Filling:

Method:
1. Heat oil and put spinach and garlic in it.  Stir well for a minute and add cream, salt and pepper and stir again.
2. Add cheese and adjust the seasoning.  Stir till thick and keep aside.


For the Crepe Batter:

Method:
1. Sift flour and salt in a bowl.  Add egg and half of the milk and beat thoroughly until smooth.
2. Add the remaining milk and beat till bubbly.

Making the Crepes:

Method:
1. Heat about 10-inch nonstick pan.  Pour in a little batter and tilt the pan to thinly coat the base.  Cook quickly shaking the pan and loosening the ends with a spatula.  Spread about 3 tbsp. spinach mixture, place 3 slice of tomatoes and sprinkle some grated parmesan and emmental cheese and fold into half and serve immediately.
