Red Pepper Aubergine Sauce

Ingredients:


This is a hearty sauce with the best Mediterranean vegetable flavors.


Ingredients:

1. 6 red bell peppers, roasted, seeded and skinned
2. 2 eggplants (aubergine, about 500g), roasted and skinned
3. 2 plum tomatoes
4. 3 tbsp. olive oil
5. 2 large garlic cloves, crushed
6. 2 tsp. dried shallots
7. 1 tsp. dried chili flakes
8. 2 tsp. dried oregano
9. salt to taste
10. 4-5 tbsp. cream
11. 350g penne pasta, cooked al dente and drained well.


To Serve:
½ cup freshly grated parmesan cheese.

 



Method:

Method:

1. Combine together, red bell peppers, eggplants and tomatoes and blend to a smooth paste.
2. Heat oil and add garlic, shallots, chili flakes and dried oregano.  Stir for half a minute and add the ground paste.  Stir well and cook for about 10 minutes.
3. Add salt and cream and stir well.
4. Stir in the cooked pasta and remove from heat.
5. Serve hot sprinkled with grated Parmesan cheese.
