Pesto
Ingredients:
Traditionally the ingredients for pesto are pounded together in a mortar to make an aromatic rich flavored green paste. Usually served with pasta, it can also be stirred into risotto, potatoes, soups, vegetables and tomatoes. It can also be used as a spread for sandwiches or crostini or on mozzarella cheese. For a variation, substitute parmesan cheese with goat cheese. Or use other herbs like sage, parsley or coriander for different results.
Ingredients:
1. 2 cups fresh basil
2. ½ cup pine nuts
3. 2 garlic cloves, minced
4. salt to taste
5. 1/3 cup extra virgin olive oil
6. ½ cup freshly grated Parmesan cheese

Method:
1. Puree basil, pine nuts, garlic and salt. Stir in the grated cheese.
2. Gradually add olive oil stirring continuously.
3. Taste and adjust the seasoning.
4. Store in an airtight container, covered with a little oil to retain color. This will keep for a month. But once the container is opened, the sauce should be used within 2-3 days.
To serve, stir in some cream in the pesto sauce, adjust the seasoning, toss in the pasta and serve garnished with some pine nuts.
