Primavera
Ingredients:
This is a traditional delight and makes for a great light meal anytime!
Ingredients:
1. 4 tbsp. extra virgin olive oil
2. 2 garlic cloves, crushed
3. 1 tbsp. dried shallots
4. 1 cup chopped onions (into long strips)
5. 2 cups chopped bell peppers (green, red and yellow, chopped into long strips)
6. 1 cup boiled french beans, chopped into long strips
7. 1 tbsp. fresh or dried oregano
8. salt to taste
9. 1 tbsp. lemon juice
10. 1 cup chopped tomatoes (into long strips)
11. 1/3 cup freshly grated parmesan cheese
12. 350g fussili pasta, cooked al dente and drained well
To Serve:
½ cup freshly grated parmesan cheese.

1. Heat oil. Add garlic and shallots and stir.
2. Add onions and bell peppers and stir for 3-4 minutes.
3. Add french beans and stir for 2 minutes.
4. Add oregano, salt and lemon juice. Stir well
5. Add tomatoes, stir well and remove from heat.
6. Stir in the Parmesan cheese and the cooked pasta.
7. Serve hot topped with Parmesan cheese.
