Lasagna

Ingredients:


For The Sauce:

Ingredients:

1. 1 tbsp. extra virgin olive oil
2. 2 tsp. minced garlic
3. 3 cups fresh tomato puree
4. 1/4 tbsp. tomato paste
5. ½ cup chopped olives (optional)
6. 1 tsp. sugar
7. salt and pepper to taste
8. ½ tsp. chili flakes (optional)
9. some water (if required)

For Vegetable layer:

Ingredients:

1. 2 tbsp. olive oil
2. 1 cup zucchini-chopped into  circles
3. 1 cup eggplant-chopped into  circles
4. 1 cup button mushrooms-chopped into circles
5. ½ tsp dried oregano
6. Salt to taste.

 



Method:

For The Sauce:


Method:

1. Heat oil  and sauté garlic for half a minute
2. Add tomato puree and paste and cook for 5-6 minutes stirring occasionally.
3. Add olives, sugar, salt and pepper.
4. Add some water (if necessary) to get required consistency.

For Vegetable layer:

Method:

1. Heat oil and sauté all the vegetables on high flame for 2-3 minutes till they are light brown.
2. Add oregano and salt and mix well.

For the vegetable layer a combination of the above vegetables can be used or a single vegetable can be used to suit your taste.

Making Lasagna:

6-8 lasagna sheets (or more depending upon the size of the casserole)
2 cups cottage cheese (creamed)
1 cup grated mozzarella cheese

Cook the lasagna sheets in boiling water for 5 minutes.  Take out and set aside.
Arrange a layer of the cooked lasagna sheets to cover the bottom of a lasagna dish.
Put a thin layer cottage cheese
Arrange a single layer of the sautéed vegetables over the sauce.
Pour some tomato sauce over it.
Repeat the layers.
Top it with grated mozzarella.
Bake in a pre-heated oven at 200oC or 400o F for about 30 minutes till the cheese is slightly browned.
