Burritos with a difference

Ingredients:


You can use the canned refried beans.

Ingredients:

1. 8 corn Tortillas
2. 2 cups refried beans
3. 4 cups salsa
4. 1 cup finely chopped red onions (ordinary onion will also do)
5. 1 ½ cups sour cream (or cream frais)
6. 2 ½ cups grated cheddar cheese.

Making refried Beans


Ingredients:
1. 2 tsp. vegetable oil
2. ½ cup chopped onions
3. 1 garlic clove, chopped
4. salt to taste
5. 400g boiled pinto beans,( I have used kidney beans also)



Method:

Method:

1. Soften the tortillas by warming them up.
2. Take one tortilla on a plate.  Spread about 11/2 –2 tbsp. refried beans on it leaving about 1-inch on the sides to roll up.
3. Then spread about 1 ½ - 2 tbsp. salsa on it.  Sprinkle about 1 tbsp. chopped onions over it.
4. Then spread about 1 tbsp. sour cream over that and lastly end with sprinkling about 2 tbsp. cheese on it.
5. Now roll the tortilla tightly and put it into baking dish.
6. Similarly prepare all the tortillas and place them in the baking dish.
7. Sprinkle all the left over salsa on the top of the prepared tortillas.  And top that with the left over cheese.
8. Bake the tortillas in a preheated oven for about 20 minutes at 200oC until the cheese starts melting and browning.
9. Serve immediately topped with the left over sour cream.


Making refried Beans

Method:
1. Heat oil in a pan.  Sauté onions and garlic for 2 minutes.  Add salt and the beans and cook for two more minutes stirring in between.
2. Mash the mixture with a potato masher.  Add some water for required consistency.
