Pepper Quesadillas

Ingredients:


You can put a jalepeno in the peppers for that little spicy taste.  You can also substitute peppers with corn and mushrooms or spinach and onions.

For the filling:

Ingredients:

1. 1 tbsp. oil
2. 1 big green pepper, chopped into 1-inch long strip
3. 1 big red pepper, chopped into 1-inch long strip
4. 1 big yellow pepper, chopped into 1-inch long strip
5. ½ tsp. cumin powder
6. salt to taste
7. ½ tsp. lemon juice.

Making Quesadillas:

Ingredients:
8 tortillas
pepper filling prepared as above
1 cup refried beans
2-3 cups grated monteray jack or cheddar
salsa to serve.


Variation:
Mushroom and corn quesadillas
Spinach and onions.



Method:

For the filling:

Method:

1. Heat oil.  Stir in the peppers and cook for 4-5 minutes in medium flame. 
2. Add all the other ingredients and stir well.

Making Quesadillas:

Method:

Take a tortilla.  Spread the pepper filling nicely.
Spread cheese generously on it.
Cover with another tortilla.
Spread refried beans over the second tortilla and spread with cheese generously.
Prepare all the tortillas likewise to have 4 quesadillas.
Bake them in a preheated oven for about 10 minutes at 200 degrees centigrade.
Serve hot with salsa on the side.
