Baked Rice

For the rice
1. 1cup basmati rice
2. 4 tbsp cream
3. salt to taste
4. ¼ tsp pepper
For the tomato layer
1. 3 tsp oil
2. ½ tsp. oregano seeds
3. 1 tsp. of oregano leaves.
4. ½ onion, chopped finely
5. ½ green pepper, chopped finely chopped
6. 1 ½ cup tomato puree
7. 50 gm paneer cut in small cubes
8. 1 cup mixed boiled vegetable cut in small cubes (peas, carrot, beans)
9. ¼ tsp pepper
10. ¼ tsp chili powder
11. salt to taste
12. pinch of sugar
13. 2 tbsp cream
For the spinach layer
1. 2 tsp oil
2. 1 ½ cup spinach paste
3. ¼ cup cream
4. ¼ tsp pepper
5. ¼ tsp chili powder
6. salt to taste.

For the rice
1. Boil the rice and cool.
2. Add cream, salt and pepper and mix properly and keep aside.
For the tomato layer
1. Heat oil. Add oregano seeds and leaves. Add onions and green pepper and stir for 3/4 minutes
2. Add tomato puree and cook for 10 minutes.
3. Add the paneer and boiled vegetables and stir
4. Add pepper, chili powder, salt, a pinch of sugar and cream.
5. Cook for 2 minutes and remove from heat.
For the spinach layer
1. Heat oil. Add spinach and cook for 10 minutes
2. Add cream, pepper, chili powder and salt and cook for 10 minutes and remove from heat.
To Bake
1. Take a big baking dish. Shift half of the rice mixture to it and make a layer of it.
2. Make a spinach layer on top of the rice layer using half the spinach mixture.
3. On the spinach layer make a tomato layer using half of the tomato mixture.
4. Again make a rice layer using remaining of rice, then spinach layer and lastly the tomato layer.
5. Sprinkle grated cheese over the top tomato layer.
6. Bake it for 10/15 minutes till the cheese melts.
7. Serve hot with papad.
