Very easy and quick to make this dessert is served chilled.


Ingredients:

1. 1 ½ liter whole milk.
2. 2 tbsp. white vinegar or lemon juice.
3. 3-4 tbsp. sugar (or to taste).
4. 1 tsp. rose water (optional).
5. 4-5 green cardamoms, peeled and crushed.
6. ¼ tsp. saffron.



Method:

Method:

1. Heat 1 liter milk in a pan.  When it starts boiling add vinegar (or lemon juice) and wait a few seconds till the milk curdles and separates.  When the milk is separated, cheese will float in a pale greenish liquid.  Drain and keep the cheese aside for half an hour till all the liquid is properly drained out.
2. Heat the remaining ½ liter milk in another pan.  When it starts boiling lower the flame and cook, stirring in between till it reduces to half.  Remove from heat.
3. Put the cheese and the condensed milk in a blender, add 3 tbsp. sugar, rose water, cardamoms and half of the saffron.  Blend to a smooth mixture.  Taste and adjust the sweetness.
4. Pour the mixture in 4 dessert serving bowls.
5. Sprinkle a little saffron on the top and refrigerate for 4-5 hrs.
6. Serve chilled.
